TAS2R16 encodes a bitter-taste receptor (a member of the TAS2R family of G-protein-coupled receptors expressed in taste bud cells) that detects beta-glucopyranoside-containing bitter compounds found in some plant foods. Common coding variants in TAS2R16 are associated with differences in bitter-taste sensitivity and, by extension, overall taste perception including how sweet and bitter flavors are experienced.
